Viticulture

· Climate: cool temperate Mediterranean climate - 1100mm average annual rainfall – 1590°C heat summation with a base of 10°C from April - breezy with significant temperature extremes in August and September

· Soils: basaltic

· Area: hilly, altitude between 250 and 300m asl

· Vineyards: 5 distinct plots facing south and west, with north-south + east-west orientation of the rows, density 5,000/8,000 stocks/hectare, unilateral cordon Guyot, planted in 2001, yield 0.9kg/stock, 45-70ql/ha, yield 25-35hl/ha

· Variety: Merlot and Cabernet Sauvignon

· Farming: organic; rational pruning, disbudding, double topping, suckering, thinning and leaf stripping before harvest

· Labour: 750h/ha per year of manual labor

· Harvest: grapes are hand-picked into perforated crates in late September

Winemaking

· Mashing: grape sorting, shelling for Merlot, destemming and pressing for Cabernet

· Maceration: cold soaking for Merlot, direct fermentation for Cabernet

· Fermentation: controlled temperature, selected indigenous yeasts, pumping over at the beginning

· and punching down at the end, static draining

· Refinement: in wood until the following summer; cold stabilization and bottling in autumn

· Analysis: 13.5% alc./vol. - 0 g/l residual sugar -5g/l fixed acidity - 3.6 pH - 29g/l extract

· First vintage: 1999

· Production: 8,000 x 75cl bottles

Sharing

· Appellation: DOC Breganze

· Appearance: bright dark ruby, dense, with purple tinges changing to garnet red

· Bouquet: rich, deep, it starts with hints of fruit and closes with notes of gunmetal, carob and spices

· Flavour: full-bodied, pleasant, warm, rich and balanced

· Pairings: it goes well with meat and cheese finger food and with elaborate main courses; superb with wild game meat.

· Serving: bottle temperature 18°C, in long-stemmed glasses
